My experience was slightly different. I applied through VFS Chicago, and I wasn't asked for an employment letter during the initial submission. However, after my application was reviewed, I received an email requesting clarification about my residential address because my address proof didn't match one of the forms.
They never requested anything related to my employment. Based on my case, I don't think an employment verification letter is normally required, but additional documents can be requested if the reviewing authority needs clarification on a specific issue.
I applied through VFS San Francisco earlier this year, and an employment letter was not part of my standard OCI document checklist. I submitted my U.S. passport, naturalization certificate, surrender certificate, proof of address, photographs, and the required declarations. My application was accepted without any questions about my employer.
From my experience, employment information wasn't relevant to my OCI application because the focus was on proving my identity, current citizenship, and Indian origin. That said, different situations can result in additional document requests, so it's always worth reviewing the latest checklist before submitting your application.
I think there is some confusion because document requirements can differ from one consulate to another. My brother recently applied for an OCI card in the UK and was not asked for an employment letter. However, the authorities can always request additional documents if they need further verification.
I applied for OCI as a retired applicant and did not have to provide any employment-related documents. The application was processed without any issues. In my case, the focus was mainly on citizenship, passport, address proof, and Indian-origin documents.

I helped my wife apply for her OCI card through VFS New York a few months ago. She's self-employed, so we were also wondering whether proof of employment would be needed. It never came up during the application.
As far as I know, the standard OCI checklist doesn't generally include an employment letter. If a consulate needs extra information for an individual case, they may contact the applicant directly. That's why it's important to keep an eye on your email after submission.
I would recommend relying on the latest official OCI checklist rather than older forum posts because documentation requirements can be updated.
