My experience was a bit different. I never received the email because it ended up getting blocked by my email provider, but the PAN had actually been generated. I checked the online status again after a few days and found that there was an option to download the e-PAN directly.
It might also be worth confirming that your Aadhaar-linked mobile number and email address are up to date because that's where most of the notifications are sent. Requirements and processing times can change, so I'd rely on the official status page rather than just waiting for an email.
I went through the same process a couple of months ago. In my case, I first received an SMS confirming that my PAN had been allotted, and the email with the e-PAN arrived a little later the same day. Until then, the status page only showed that my application was being processed.
Once the PAN was generated, I was able to download the e-PAN using the acknowledgment details. If your status only says the request has been received, it may still be under verification. Based on my experience, I'd give it another day or two before worrying.
You can see the e-PAN request from many online sources, like the NSDL official website, or through SMS, where you have to just message NSDL PAN, and after entering all the acknowledgment numbers, you can select WhatsApp, which is also a popular option to check the e-PAN request successful or not.
Get all the information relating to your e-PAN card by checking your PAN status through the NSDL portal. If your PAN card is delayed by the due delivery date, you have received mail regarding the status of your PAN card. These are some of the ways that I know and have used to know the status of my e-PAN card.
The simple application process to check your e-PAN request. You need to go to the official website of the e-filing portal of the Income Tax Department, then click on the ‘Instant PAN‘ option, and click on the option ‘Update PAN’, and you need to enter your 12-digit Aadhaar card number, click the details you need to update in your E-PAN card, like name, address, date of birth, etc, and click on the on the confirmation checkbox, and click ‘continue’. Then you need to enter your registered mobile number linked with your Aadhaar card, and enter the 6-digit OTP sent to your registered mobile number. After that, your application is successfully submitted online, and you will get the acknowledgement number by which you can check the status of your Indian e-PAN card online.

I applied from outside India while visiting my family and had a similar concern. My application stayed in the "received" stage for several days before changing to show that the PAN had been allotted.
After that, I downloaded the e-PAN from the portal instead of waiting for the email. If your verification is still in progress, a short delay isn't necessarily a sign that anything is wrong. If there's no update after a reasonable period, you could contact the PAN service provider for clarification.
